Food Schmooze: The Veggie Burger Challenge

Faith Middleton’s Indian Veggie Burgers

1 – 14 oz. can Chick Peas drained and chopped

1 – 14 oz. can Lentils drained and chopped

1/2 Cup Brown Rice cooked well and drained

1 small Red Pepper diced

1 small Green Pepper diced

6 Green Beans sliced thin

1 Cup Red Onion diced

1/2 Cup Mushrooms diced

1/2 Cup Corn frozen

1/2 Cup Carrots shredded

1/2 Cup Walnuts toasted and chopped

1 Tb Curry

1 Tb Kosher Salt

1/4 tsp. Black Pepper

2 tsp. Hot Sauce

2 – 3 Cups Panko Bread Crumbs

Makes 8 – 10 Burgers

Chris Prosperi’s Mediterranean Veggie Burgers

1 Package Seitan Crumbles

1/4 Cup Olives minced

1/4 Cup Sun-Dried Tomatoes minced

1 Cup Mushrooms diced

1/2 Lemon zest

2 Tb Chives

1 Tb Paprika

1/4 - 1/2 Cup Corn Starch

Makes 4 – 6 Burgers
